The word desiccate basically means to remove the water from something -- in general, for preserving foods, metaphorically.

It comes from de- ("from", "of") plus siccare, which means "to dry", from siccus, "dry".  More about the background of siccus can be found at Online Etymology.

Mostly I just...remember them, somehow. But double letters throw me sometimes. I should try the etymology tack more often.
