Ooo, geek question time.  Within the context of webpages and such.

1: I want to see the data that comes into the server.
2: Just check the POST data.
1: Oh, good idea.

What does this even mean?

POST is an HTML request method; it's what forms use to submit information from the user to the server. So like, when I push the "Post Comment" button, this form will submit the contents of the message box to the database.

Ah, yes.  That's what that's called.

So how would I keep a log of information sent in via forms?  Not the stats (which are kept in IIS logs), but the data that's sent.
